Ingredients:
- Soba Noodles
- Romaine Lettuce
- 1 Bell Pepper
- 1/2 Red Onion
- 1 Cucumber
- 1 Persimmon
- 1 Asian Pear (any seasonal fruit works! Strawberries for Summer, Asian Pear for Fall, etc)
Ingredients for Dressing:
- 1/2 cup Olive Oil
- 1/4 cup Sesame Oil
- 1/2 cup Soy Sauce
- 1/2 cup Vinegar
- 1 tsp Sugar
- 1tbsp Sesame Seeds
- 1 tbsp Korean Hot Pepper Powder
- 1 tsp Black Pepper
- 1 tsp Crushed Garlic
- Chopped Green Onions (optional)
Recipe:
- Boil soba noodles for 2.5 minutes
- Drain noodles and rinse in cold water immediately after boiling
- Overcooked soba noodles will become gummy, so it is important to watch the noodles and cool them quickly!
- As the noodles cool, prepare the dressing
- Combine olive oil, sesame oil, soy sauce, vinegar, sugar, sesame seeds, Korean hot pepper powder, black pepper and crushed garlic
- Mix the dressing until the sugar has dissolved
- Wash the produce
- Tear the romaine lettuce for larger leaves in your salad
- If you prefer smaller mouthfuls, feel free to chop instead!
- Slice the bell peppers, cucumbers, and red onion into thin slices
- Peel and slice the persimmon and Asian pear
- Place the noodles in the middle of your serving dish and arrange the salad in a ring around the noodles
- Pour the dressing lightly over the noodles and salad
